caramel corn

This is a recipe I used to make for your dad ALL THE TIME.  He especially loved it when watching The Patriots play. I got the recipe when he was in seminary.
Ingredients
  • 1 c unpopped popcorn
  • 1 c butter
  • 2 c brown sugar
  • 1/2 c corn syrup
  • 1 t salt
  • 1/2 t baking sode
  • 1 t vanilla

Instructions
  • Pop the popcorn and add to a large roasting pan, coated in non-stick spray (the pan, not the popcorn)
  • Melt the butter in a large saucepan.  Stir in brown sugar, corn syrup, and salt.  
  • Bring to a boil, stirring constantly.  Boil 5 min without stirring.  
  • Remove from heat and add in baking soda and vanilla.
  • Pour over popped corn and stir well.  Back at 225º F for one hour, stirring every 15 min.
  • Cool before eating, or do what your dad always did and try to eat before it cools and burn your mouth with hot sugar :)
