chicken enchiladas

Ingredients
  • 2 cups shredded rotisserie chicken
  • large jar of salsa verde (make sure it is mainly tomatillos and peppers)
  • 6 flour tortillas
  • 1 c. sour cream
  • 1 T finely chopped onions
  • 1/2 c cheddar and 1/2 c jack cheese mixed together

Instructions
  • Preheat over to 350º F
  • Mix chicken, sour cream, minced onion, and 1/2 cup of the mixed cheese
  • Spread 1/2 c salsa verde in the bottom of baking dish
  • Warm tortillas, add about 1/2 cup filling to each tortillas.  Wrap tortilla around filling and place seam-side down in the baking pan. 
  • Cover with remaining sauce and the other 1/2 cup of cheese.
  • Bake for 20 min or until sauce is bubbling and cheese is browned.
  • Serve over rice.
