- 2 cups shredded rotisserie chicken
- large jar of salsa verde (make sure it is mainly tomatillos and peppers)
- 6 flour tortillas
- 1 c. sour cream
- 1 T finely chopped onions
- 1/2 c cheddar and 1/2 c jack cheese mixed together
Instructions
- Preheat over to 350º F
- Mix chicken, sour cream, minced onion, and 1/2 cup of the mixed cheese
- Spread 1/2 c salsa verde in the bottom of baking dish
- Warm tortillas, add about 1/2 cup filling to each tortillas. Wrap tortilla around filling and place seam-side down in the baking pan.
- Cover with remaining sauce and the other 1/2 cup of cheese.
- Bake for 20 min or until sauce is bubbling and cheese is browned.
- Serve over rice.
