- 1-2 cans diced tomatoes
- 1 can Rotel tomatoes (optional)
- 1 can tomato sauce
- 1 can black beans (drained/rinsed)
- 1 can corn (or frozen corn) (drained/rinsed)
- 1 lb ground beef
- 1 small onion - diced
- 2-3 cloves garlic - minced
- One colored pepper - diced (optional)
- Chili power, cumin, coriander, oregano, salt/pepper
Instructions
- Cook garlic, ground beef, onion in pan until onion is soft and ground beef is cooked through
- Strain out any excess grease
- Add salt/pepper to taste
- Add to crockpot
- Add all canned ingredients. I shift the quantities based on what I have. If it is too watery, add up to one small can of tomato paste. A large can of tomatoes can be used. The Rotel tomatoes adds some heat. Sometimes I will use 2 cans of black beans to fill it out.
- I eyeball the seasonings but here is a rough estimate of what I use.
- 2 T of chili powder.
- 1 T cumin
- 1 t oregano
- 1/2 t coriander
- 1 t of my own dried pepper mix from garden (adds heat. maybe use 1/4 t cayenne)
- salt/pepper to taste
- Let cook in crockpot at low for 8-10 hours
