red curry-glazed salmon

Ingredients
  • 4   5-ounce pieces of salmon fillet
  • 1 T Thai red curry paste
  • 1 T canola oil
  • 1 t light brown sugar
  • salt and pepper

Instructions
  • Heat broiler.  Place the salmon on a foil-lined broiler proof baking sheet.  
  • In a small brown, mix together the curry paste, oil, sugar, 1/2 t salt, 1/4 t pepper.  Brush the salmon with the curry paste mixture.
  • Broil until the salmon is opaque throughout, 5-7 minutes.  
    • I sometimes use this sauce on the salmon and then bake or air fry the salmon.  The sauce is the most important part.
  • Serve over rice.
